Smoked Turkey Enchilada Casserole

I have alot of vacuum sealed smoked turkey legs and thighs and use them alot in beans, soups and pot pies. I decided I wanted to make a Enchilada Casserole with some of it, I usually use shredded beef for this recipe, but this turned out fantastic!

It's actually a recipe of my wifes originally but I don't really go by the recipe, just the idea.

The basic recipe is in the the Recipe Section, Smoked Chuck Enchilada Casserole

Very nice Larry. I did a turky pot pie with leftovers at Thanksgiving. I will try that if there are any leftovers from tomorrow.
