Smoked Turkey Enchilada Casserole

I have alot of vacuum sealed smoked turkey legs and thighs and use them alot in beans, soups and pot pies. I decided I wanted to make a Enchilada Casserole with some of it, I usually use shredded beef for this recipe, but this turned out fantastic!

Did you make the recipe up? It looks good. We fry the corn tortillas for a few seconds too.. Great casserole Larry!!!!
 
Very nice Larry. I did a turky pot pie with leftovers at Thanksgiving. I will try that if there are any leftovers from tomorrow.
 
Great looking casserole. We had a similar one the other nite made with smoked chuck. Never knew how many notches smoked meat kicks it up til I got into queing. Sure like learning from you guys.

The camera is down right now,but I made some Tamales using a rub(NakedPigs-sorry) and they were the bomb ;)

good flavor but with a smoky taste...just be sure and save some drippings
