What cut 'o beef?

I like to use eye of round. Less fat and sinew that can go rancid when you trim it right.

1lb sticks made with a jerky pistol 93-7 ground beef --- Top

3lbs Sirlion Tip ---- bottom left

4lbs Bottom Round ----- bottom right

4-5hrs Mmmmmmmmm

150 degrees --- times n temps may vary slightly with side box smokers...UDS is direct heat

The best meat I have tried was the Sirloin but the most expensive as well..

Got this at a retail cabelas store

Almost enuf to make ya sweat but not quite...a bunch of different kinds out there.

Cured for 24 hours in the fridge

8lbs gone in less then 2 days.......
