Smoked Chuck Enchiladas

I found a 1lb bag of vacuum sealed chuck that has been in the freezer for close to a year. Plopped it in a pot of water, heated through, stuffed in corn tortillas, covered with enchilada sauce, cheese and into the oven for 20 minutes and then under the broiler until browned. I also made some beans and rice with leftover rice from chinese the other night along with a can of kidney beans, a little salsa, chili powder, cumin and granulated garlic and heated through. Very tasty quick dinner!!

looks good....I've got a chuck in the freezer to throw on
my next smoke....am I to understand I need one that
is over 5 or 6 pounds for ultimate goodness?
