Looks good! One more tip: put the water pan into the WSM before you set it onto the fire. You might singe all the hair off your hands.

JB, next time start off with 10-15 coals, that will help keep your temps lower. But 300 is not too high for butts. The butts look great by the way.

P.S. what kinda coonass uses a styrofoam cup at home to drink coffee?? Do I need to buy you a coffee cup??

I told him the same thing about starting with a few coals only..
Those butts were very tear-able when finished!!!

A big spatula will solve that sticking problem. The fat that is left on the grates is hard as a rock anyway.
