Did you foil at anytime during the cooking process ? Yes, after it hit 140*

What temp did you take it too ? When finished, it was 195*, but use the fork test!
Where did you find a bone in chuck ? Local supermarket

What temp did you smoke at ? Grate temp was 240 - 250*.

How long did it take that side of beef to cook ? 8 or 9 hours. I was cooking so much stuff, I didn't pay much attention.

Did you inject ? No.

How long are you going to let it rest ? 3 hours
