I intend to hold them in a cooler just like a butt or brisket for a few hours even though I have been told it will ruin the skin.

I don't eat the skin anywhoo. ;)
 
Cliff when we do the church cook(750 halfs) we hold them in a cooler and everything seems to turn out fine. Skin just isn't crispy.
