Noticed Sassafras and Hackberry chunks for sale at an semi-upscale meat market.
Now what does one smoke with Sassafras and Hackberry ?
This place also had "sweet" maple and grapevine as well as the fruit and hardwoods.

Being in the Dallas area, we have tons of Hackberry and I've never heard of it being used to smoke anything.
 
If Texas sassafras is anything like the stuff I grew up with in NC, it should be great! Mild, sweet... we used it with pork. I know there's some concern about the bark being toxic so you might read up on that...
 
Double dittos on Hackberry..great heat producer with little to no flavor. Totally and highly non offensive. Makes a great base for something more aromatic and slightly below the BTU output of Oak and quite a bit higher than Ash which is also a great neutral if you can get it free. Sassafras I have bumped into make your stuff taste like like Root Beer. I like that flavor in Root Beer but not on animal flesh..lol.

Ain't it great to learn something new every day.
I did purchase some sugar maple chunks at this store and think I'm going try it with some pork ribs.
