i have this in the drum now, will try to post pics later


South of the border meatloaf (heh)

2 lbs ground beef
1 cup salsa
1 can refried beans
2 1/2 TBS mexican seasoning mix (recipe follows)
1/2 cup shredded mexican cheese

combine all ingredients and smoke to 160* internal

very easy and tasty....



Mexican Seasoning.... double this for 1 cup


Ingredients

* 2 1/2 tablespoons chili powder
* 1 1/2 tablespoons paprika
* 2 tablespoons cumin
* 2 teaspoons oregano, preferably Mexican oregano
* 1 tablespoon garlic powder
* 1 1/2 tablespoons onion flakes (minced dried onion) or onion powder
* 1/2 teaspoon cayenne pepper, omit if you like it mild and increase if you like it spicier
* 1 teaspoon salt, adjust for your taste the salt helps to keep it fresh when storing
 
Guess a person could call it chili loaf. Ya know I used to know this nice older lady from up at Whiskeyta Falls who always throw a can of Wolf Brand Chili in her meatloaf. Tasted purty dang good. Kept it super moist.
