I did'nt get to do a turkey for Thanksgiving.Doing one today on the cypress smoker rotisserie style.Rubbed it with olive oil s&p and some poultry seasoning.It was a cold day so I fired up my fire pit to keep me warm while the bird was smoking.cooked it at 250 for four hrs. directly over the coals. Coals are about 24in beneath bird. Came out perfect. enjoy the pics.
 
Wow. You have just aptly demonstrated the best way known to man to cook birds and assorted other stuff. Congrats on the fine job and super kewlish equipment. You are indeed a fortunate young man to have all them fine cooking instruments.
