Rainy Day Ribs

Bad day for being outdoors but a good day for smoking ribs.

I had to try out my stash of pecan.

Pecan imparts a very good smell coming out of the smoker. It is not strong but imparts a great flavor. It does not overpower the flavor of the pork or the rub.

I made a sauce that turned out very good also. It is Dave Klose's sauce that he has listed here.

He calls it a Texas sauce but I think he meant to say Carolina.

I need some feedback on the sauce.

Nice looking ribs Cliff. I like to use pecan wood when cooking ribs myself.

Good job on the ribs! I've been wanting to try some different wood flavors, but I've got plenty of oak at my leisure. I've got some maple from the November ice storm, but it needs to set for another month.

Nice looking ribs Cliff. I love using pecan and I usually add a few pieces of cherry or apple as well. Thanks for sharing.
