This past weekend I fired up the smoker to cook pork butts for a K.C. Royals tailgate party my wife and I throw each year. It keeps getting bigger and bigger. This year we have 85 folks joining us for the tailgate and 78 going into the game!!! It's a lot of fun.

Knowing I was going to fire up the smoker I took some "orders" from friends to smoke something for them. I love cooking for people, but I am always glad when it's done and everything is cleaned up.

Here are pics of the cook.

The wife took a pic of me as I was getting started. I was cutting the fat cap off the butts to use in the beans. I rub the fat cap with the same rub and smoke them. When I wrap the butts, the fat caps get wrapped in foil and into the freezer until I make the beans! Yummy!

Added a few pass throughs for the probes before firing up the smoker. Beats ruining the probe wire shutting the door on it.

Flat sliced! Juicy and tender...almost too tender, but managed to keep it together for slicing.

We'll serve pp sammies, dogs and brats. Along with beans, pasta salad and chips. To wash it all down we'll have a couple kegs of beer and several cases of water. I'll post pics shortly after the event is over.
 
smokin all those lollipops in the muffin tin is awesome...I am going to blatantly plagarize that one soon. Everything looks fantastic

Nick, don't forget to add a tablespoon of unsalted butter in each hole. After they've cooked for a few hours, take them out of the tin and set on the rack to cook a bit longer to dry out the skin. ;) You can also sauce them at that time too.
 
****** what a spread of food! Myron Mixon is going to sue you for using his 'cupcake method'! LOL Great idea for the Lollipops!
 
Can I intrest you and yer friends in a Marlins game. We need 85 people at our games!
Seriously good cook! I am going to dig up some muffin pans, my wife is gonna kill me though. It will be worth it. :Þ

Thanks GH. I haven't had any issues getting the muffin pans cleaned up after a cook yet. My wife thought I was surely going to ruin them. :roll: :LOL:
