Pork Shoulder and 5 Racks + Tips

Shoulder went on at 5:30 tonight. Startin' 5 racks of ribs in the mornin' when the butt is off. Im gonna use my WSM and If I aint gotta nuff room Ill fire up the Webber Kettle. Ill post pics tomorrow of everything. Im just too damned excited about all the food that will be available tomorrow!

Shouldnt be too bad. Im gonna let the WSM fly solo and probably check it around 4 or 5am. Ill get a couple a pics in a bit. They are uploading now.

Oh, and I was outta seasoning till i remembered I had all the stuff for some wolfe rub in a bag in the pantry..

shoulder at 175* almost ready to be wrapped.




Ribs went down at about 9am but havin trouble gettin the temps up? Ive never had that happen before on the wsm....My guess is that there's so much meat its havin trouble gettin up real quick? Anyone?


WSM half Loaded and stuck in bbq jail!


Fully Loaded ( I expect to be the same when they come off, but not in jail. )

Yup, I forget most of you guys burn a bit more efficently than me...I do nothing but burn stick....every two hrs add 3 splits...
