Pork loin?

Gonna' smoke a pork loin this sunday. =D> Never done one, any good info? 8-[
 
Back in March, Mac posted a recipe and some photos of some great looking stuffed pork loins. My good friend Chuck (AKA BobbyQ) Found the recipe while cruzing the texasbbqrub forum and we decided to give it a try. We asked Chucks cousin, who is a butcher, to give us a good price on the meat so we got all three loins for $1.50 per lb. they were about $8.50 each.
The recipe is easy and if you read Mac's link again he recommends adding other things for variety. We stuffed all three and added garlic to the recipe. Then I smoked them in the Gator for about 3hrs at about 275 degs. with oak until the center of the filling was 150degs and the meat was about 168 deg. The only thing that happened that I wasn't expecting was the cheese foamed out a bit and now the inside of my pit looks like "Natural Cheese Caverns" Cheese stalactites all over. :LOL: Give it a try it was great.

Hey Puff,
I did a stuffed Pork Loin for some people at work around Christmas. It came out fantastic. I used a variation of Bruce B recipie.
Stuff with Prochuto ham, provolone cheese, spinach and portabella mushrooms. Sprinkle a little rub inside before you tie it up and then during the cook, baste with honey, mustard and rosemarry. Its fantastic.
