Pork Lion

I finally had time to make a pork loin and used Wolfe Rub Bold on it. It was excellent! I wanted to hold the finished loin over my head and give it a proper name like in Roots.

Rubbed Loin

Waiting, waiting and more waiting

Finished - again it cooked a little hot and a little fast but I am getting better aclimated to the cooker.

Ta Da!!

It was the best yet on my new pit. We had sandwiches for the rest of the weekend and probably lunch today.

Thanks everyone! The last of the loin will be my lunch today.

I hear you Larry. I saw Surfin Sapo's new video and wish I had enough people around to cook BIG like that.

SS, you DO have a bunch of people you are cooking for? If not you are the best fed Texan on the planet.
