Pork Butt and First Overnighter

Did my first overnighter and thanks to the Guru it was noneventful and I slept like a baby.Rubbed them in the morning yesterday with some SuckleBusters Hoochie Mama rub. Put the butts on the drum around 10:00 last night at 215* with some chunks of apple for smoke. . When I woke up the next morning one of the butts was at 180 and I set the Guru up to 225*.

Butts going on the drum.

Butts at 195 and the Thermapen went in like butter.Took exactly 12 hours to cook.

Rested for one hour.

Pulled.

Re: Pork Butt and First Overnighter

Great job Vermin. That looks good enough to eat. In a vending situation whut you got right there would out draw customers two to one in Tejas as compared with brisket. Pushed pork do not stand a chance of ever becoming a leftover at my house. Now have seen em nibble around on a big old right pawed T Rex brisket for a few days a time or two. The pig meat dont normally last till day light. Smart thinnin. I was gonna say I would try to cook something tomorrow but it could snow here and it gonna be colder than a hoers heart. Think I will stay indoors and eat canned soup.
