I have a great long time friend named Mark Bowker and tho he's a yankee living in Pittsburgh we are best of friends. I've known the guy for about 10 years online and just met him 2 years ago when he came down for the Super Bowl and came back again this year too. Super great guy.

He cooks Chili and does it great and makes one each time he visits. Well he competed this year using the Pit Pirate Team name wearing our Team gear and won 3rd Place in a Popular Chili Contest in Pittsburgh. You go Mark!! Mark works for a Nuclear Company and online name is ATNO [A True Night Owl] thus...Pit Pirate Atomic ATNO Chili!

So we here at Pit Pirate BBQ changed our Chili Recipe to his to proudly say we serve Award Winning Chili with our Award Winning Pork and Ribs. lol

Here it is folks and we* are manking some right now for a friend's B-Day Party later. The first thing ole JB gonna notice is this stuff is all FRESH. Wash yer hands 40 times after jacking with all them peppers too. We preped all them yesterday to get started faster this morning.

Pit Pirate Atomic ATNO Chili
Ingredients:
1/2 large Vidalia onion diced (full onion if you like onions)
4-6 garlic cloves minced
2 29 oz. cans Hunts Tomato Sauce
16 oz Pace Picante Sauce Hot
1 40 oz. can Hanover Redskin Light Red Kidney Beans (or equivalent smaller cans)
1 15oz can Bush's black beans - seasoned recipe
8 oz sliced mushrooms
3 large ripe tomatoes sliced and diced to medium size chunks
4 green jalapeno peppers diced (include seeds for hotter chile)
2 red jalapeno peppers diced (include seads for hotter chile)
4 green cayenne chili peppers diced (include seeds for hotter chile)
2 lbs ground beef
3 tablespoons tapioca

Spice ingredients:
1 Tbs black pepper
1 Tbs onion powder
1 Tbs Course Ground Garlic Salt with Parsley
1 Tbs Cayenne powder
6-8 Tbs Chile Powder
2 Tbs Chahula Hot sauce
2 Tbs Lea & Perinn's Worcestershire Sauce
(use seasonings at your own discretion)

Brown ground beef.
Halfway though browning add black pepper, onion powder, garlic salt with parsley, minced garlic
While browning beef -- sautee onions, and fresh jalepenos in fresh virgin olive oil -when onions have caramelized color add mushrooms and continue to sautee until mushrooms are browned.
Combine with beef until beef is fully browned.
Add and Stir in Pace Picante Sauce and both cans of tomatoe sauce.
Bring to boil.
While boiling, blanch diced tomatoes in same pan as onions and peppers to soften.
Reduce to simmer and cook 1-3 hours. ( better reheated next day)
Add to beef and sauce
Add remaining ingredients.
(for best results when adding chili power, lightly coat entire top of mix with powder. Stir in, then redo -- measurements for spices above are all estimates. I never measure just add them to taste -- don't forget the tapioca. It's a goo thickener and helps sweeten up which is otherwise a VERY HOT chile).

Woo-hoo, I'll bet you're right about that!

(A lot of spice -- even with a couple quarts each tom sauce and beans and 2 lbs ground beef -- but it sounds real tempting ... yeah, I'd eat that. :D )

Thanks for the recipe.....I hate it when reading about how great something is and then no recipe.
What else you got??????
