Perfect Prime Rib (must read)

Tis prime rib season, so I offer this great article from the good folks over at Serious Eats. The article focuses on oven roasting, but it's eminently applicable to barbecue.

Re: Perfect Prime Rib (must read)

Thanks,
Thinking about giving it a try....wish it had given minutes per lb direction rather than a given (same) amount of time for a 3lb or a 12 lb. In other words, in a 200* oven, aprox how long will it take a 14 lb prime rib roast to reach 125* internal? I normally cook in a 325* oven for about 12 min per lb

Re: Perfect Prime Rib (must read)

Mathematically, it should be about 4 1/2 hours (20 minutes per pound) at 200*.

Re: Perfect Prime Rib (must read)

Just re-read and see how that would make sense.
Thanks again

Good Q!
