Full smoke and 250 heat for two hours then wrap in foil with some beef broth or other type of juice until tender.

Yes

Since I don't know what it weighs I can't give you any info on time. But about 2 hours in the smoke and heat, pull it off, place in foil and add some apple juice or beef broth(about 1/2 cup or so) wrap it up and put it back on holding the same temps until it reaches 195 to 200 or it feels tender when you poke it with a fork or knife(threw the foil.) A flat that weighs about 7lbs will take about 5 to 7 hours this way.
