My girlfriend and I had been wanting to try the recipe "Birds of Paradise" from the book Smoke and Spice for a while now, so we gave it a go. Basically the recipe makes an herb paste that the chicken sits in for a while. About the only thing I changed was I used basil instead of mint for the paste. Smoked it with alder wood. Came out pretty good I guess, but didn't really seem to take much of the herb paste flavor. I swear you could marinate those things in gasoline and it would still come out tasting like chicken. Threw in a pic of daybreak on the ocean the other day, and one of the brewskies because I know what a fan of PBR some of you are.
 
Throw all them aromatics into a brine and it make that chicken taste like basil to the bone if that the flavor you want. Bird looks great. I would eat it as is:)
 
I have never seen the ocean...Looks do no justice i'm sure, bird looks real tasty....and I may be closed minded but I have never used mint in a recipe...I don't think I will ever will lol
