I have finally lite up the WSM. I'm smoking one butt today. I slathered with mustard and sprinkled with Wolfe Rub Original. I got the Wolfe Rub Original and Bold along with the Dial-O-Matic meat injector this week from Wolfe Rub http://wolfes5.tripod.com/wolferub/id61.html ...thanks Larry.

The butt was put on at 6:40 AM.


It has been a very long time since I smoked a butt.

 
Butt has been on for an hour and the sun is coming up.





Larry I haven't even took it out of the package yet but it sure looks and FEELS like it will inject ANYTHING.
 
Why BBQ

The fog from my breath swirled slowly
On this cold November morn.
And the wisps of smoke rose skyward
As the birds echoed up there scorn
Occasionally the sound of silence
Was shattered by the pop of a spark
Or the woeful cry of the neighbors dog
As he spoke into the dark
The pungent smell of fresh coffee
Blends in with the smells of fall
Leaves twisting and turning downward
As they answer to natures call
Words can't describe the sense of pleasure
As I add wood and tend my fire
All the sounds and smells of BBQ
Just feed my burning desire
Is this an act of sanity
To rise so early and perform this task
You evidently don't know BBQ
Or you wouldn't even have to ask

Cleglue - I like your location to Q. Nice place to sit and sip your morning libation and seats for the gallery of fans the smoking smell will surely attract.
 
When the sun's first rays hit a porch swing, a good dog, and a WSM, you know the day is going to be a good one!
 
cleglue, you are having a good time today I can see.. That's what it is all about!!! You deep fried any turkeys lately? WR Rocks... :D
 
It started raining later today but with the WSM on the porch all went well. The only thing that did happen was I thought I had the Maverick alarm set for 195 but turned off the audio alarm early today and forgot to turn it back on. I usually take the butt off at 195 and re wrap in foil and a towel and place it in a dry cooler for a least an hour. I was trying to hang a piece of somekind of iron art work in the bathroom and it was at 199 when I noticed. I also usually foil at 170 but I did plan to NOT foil this time just to see the results. The butt was a little dry in spots but moist in other. Now the major disappointment is that I've had sinus and coughing problems all week long and wasn't able to taste anything but my wife said it tasted fine. I'll vacuum pack the rest up tomorrow so I'll at least get to taste it sooner or later. Over all it was a very good day. We have been in a drought since last summer so all the rain within the last six weeks have helped. I think we are still down about 30 inches.

Surfinsapo...I haven't fried a turkey since Thanksgiving.
