If I had to do this, I think I would smoke it for as long as possible and then wrap in foil and place in the oven.

You can do that but you might want to start checking for doneness at 175 as opposed to the 190 range.

I would be leary of doing the cool down before the cooking is done. I would deffinatly go with the complete cook through before removing totaly from the heat.
