Now I know what a pork butt feels like

We had our firefighter one live burn today. The average temp was 850* :ack: inside temp with lots of smoke. I tried to tell them that we would tast a lot better if they lowered the temp to 225* but they said that they didn't want to foil later and they wanted burnt ends! All in all it was a hot day in the smoke and I didn't even get any Q for it. I am planning on firing up the smoker on Saturday for a small catering job and putting a couple of butts on for the guys and gals who helped with today.

At that temp, you can get burnt "ends" easy.

I'm just glad I didn't open this post and see a picture of you standing behind a pig!

Glad you're still safe... Billie da Grillie.

Why couldn't you do pork burnt ends?

Barbeque. Sit back, relax, and let the smoke work it's magic!

You can't drink all day, unless you start in the morning.
