Mom wanted to do an oven roasted turkey so, I did a Crown roast of pork

I got two rack of pork from costco and stitched em together and seasoned with itialian seasoning and Santa Maria rub, set it on the WSM and smoked with apple wood for about 3 1/2 hours at 300 - 325 til internal hit 145. I didn't get cut pictures, but it had a nice ring and was real juicy. It turned out a little dark, but everyone enjoyed it.





 
Wow that do look fancy smancy. I know this guy who had to put little booties on quail drumsticks when he served it to the boss lady. I feels your pain.

tying those two things together was a biotch. A hint for anyone doing this. When slicing the finished product, just peel the ribs off and cut em up then slice the loin.

I think next time I'll try to cook it a little slower and longer.... try to maintain 275 for closer to 4.5 hours instead of 325 for 3.5 hours... I think that is why it got dark, and maybe a little less wood. It got a little smokey.

BTW... the hunk of loin I didn't slice on T'day is making some outrageous sammies
