May Beef Ribs

Oh ya. Beef ribs now some of my favourite things. Here are my notes:

- Wolfe Rub Bold on all ribs, wrapped in fridge overnight
- First wood = Apple chips soaked overnight, 1 container
- Second wood @ 30 min = Mesquite chips soaked overnight, 1 container
- In rib rack in rib pan
- 3/2/0.5 method, apple juiced for the 2 bit in foil

- @ 3h lots or rendered fat, with thick side up, 225°F
- @ 5h ate one. HOLY CRAP! These things are fantastic! Left the other 3 on for 20 minutes open top foil. Covered over again, toweled while I go out to have some pints at the police BBQ in the Beach. Rated 19/20. Brilliant stuff.

Thank you sir! Fantastic stuff. Chicken and a big chunk o' beef tomorrow in the smoker to help me deal with the hangover I'm purchasing tonight.
 
I like cow. In fact whan my wife wants Sushi, I always say Hmmmm, Raw fish or Cooked Cow? I think it's a no bariner.

Can't get decent beef ribs here with much meat on them :roll: :evil:
