Salt And Pepper is great. You need to know how the meat tastes before going crazy with pumps,rubs,paste,exc. You learned to walk before you ran. Right? My 2 cents. For what it's worth.

I agree with ya SueZQ, youngin's need extra care! A good rub will give the meat an extra level of protection from drying out. Wrap in foil when it plateaus, and give it a nice long nap before serving.

Cooking a small flat can be helped by cooking it in an aluminum pan as Susan (and her man Raichlen) suggest.
