I did up a quick how to jerky making video….I was doing a brisket as well…no video of the brisket..but I had a few pops while doing it…and didn’t take any video of the jerky cook…I found some footage of another jerky cook…that I don’t know if I used or not…but I included it in this video.

Its better if it sits for 2 days in the marinade. Listen to when Mikey shows up…it’s pretty funny.
 
Great video. I've been wanting to make some jerky lately. What temp. do you smoke/cure it at? I'm assuming a WSM gets too hot.

Thanks for the link. You got a great site there. Just yesterday I spent a while looking through it and your recipes. I guess I must have missed the jerky page.

Any suggestions/techniques on how to consistently keep the WSM at 150-170?
 
My buddy charged me...Q and cured meat.

You just don't want big chunks of fat.....and usually it doesn't stick around long enough to get rancid.....

Stogie has the ticket with the cheap grill toppers to add space to the WSM..
 
Did you make the house? Can you help me make one? Maybe some sketches? I always wanted one of those houses.. :D

That part of the video was done when I was trying to use a hot plate inside of the smokehouse to provide the smoke with some sawdust....the blower for the element...blew the ash around.

No... I knew that was ash. I heard the blower too.. I was wondering about the construction of a smoker like yours. Can you help me out or maybe a link. I have found a few others on the web, but Yours is awesome and I want one similar to it..
