I got a prime rib roast...

I just woke up. didn't make it till midnight, but the firecrackers woke me back up with dogs barking etc... The prime rib was good but I think it is over rated.... The King Crab legs and the shrimp is my kind of food no how...

Sapo, if I may offer an observation. In this picture here you have the probe in way too far and possibly touching a bone or almost sticking through the other side of the roast or close to poking through.

If this was the case you would get a 'done' temperature prematurely because the roast obviously cooks from the outside in. So if the probe is almost to the outside of the other end of the meat, you're going to end up with an undercooked piece of meat. That is kinda what it looks like happened here, cause the roast almost looks raw.

Next time stick the probe in about halfway into the thickest portion of the roast and you will notice a dramatic difference.
