I came home from the parades to grill some fillets I trimmed from a tenderloin earlier today. I did these on my ceramic Primo Jr. which got up to 700 degrees in no time. I barely had time to complete plans for next years Mardi Gras weekend from start to end of cooking time. I did all the steaks with a chunk of pecan wood for a smokey flavor which turned out to be possibly some of the BEST steaks I have done yet. I intended for the piece closest to the front of the picture to go to the dogs(Pickles -the beagle and Cole the black Lab)but after the grilling they may not get the treat afterall.

Done! After basting with a lil garlic, herb and butter !

Funny you say that. I actually was the King of the biggest Mardi Gras parade down here in 1997. Endymion! :D
 
I use a bunch of woods. Apple, Cherry, Peach, Hickory, Pecan Mesquite and more but Hickory and Pecan are my favorites. I find it(Pecan)to give a smooth, rich, smokey flavor.
