Gotta late start

I meant to be up by 3am to get these 9lb+ butts on, but they didn't hit the smoke until 7am! So, I'm behind already......rubbed down with Wolfe Rub Original and I'm cooking over regular Kingsford and 4 big hickory chunks. I'm also using my new grate that arrived Friday, the others had seen better days!

I can't remember when the last time I cooked on my WSM's?? But I did a dry burn run through both of them on Friday to clean them up! The inside of both of them looked like a green sponge!! All clean now.

Did it look like your deck fence?

It only takes a week in the summertime here for that
green stuff to appear.
