Got a WSM for christmas.

The friendliest place on the web for anyone that enjoys cooking.
If you have answers, please help by responding to the unanswered posts.
Take a toothpick and slide it in between the bones, If it goes in real easy the ribs are done. I also like to grill my ribs to get a little char on them.
I have done the foil thing a couple of times and didn't care for it, the ribs were too tender.

I use a modified 3-2-1 method too..... 6 beers, wrap..... 5 beers unwrap...... 4 beers and then it doesn't matter what they taste like! :LOL: :LOL:
