The 4 bags that are cooking now will be shrunk wrapped and I will put them in the refrigerator. That will get me started for Monday and Tuesday nights. Monday night I will bring 2 unfrozen bags and 2 frozen bags and place them in our walk-in box. They will be defrosted by Wednesday. Then each night I bring 2 or 3 bags from the freezer to place in the walk-in. Thursday night at the end of the fair, I decide if a need to cook 1 last load Friday night for Saturday nights last hoorah! I'm pretty much a zombie by then and look forward to sleeping in on Saturday and Sunday mornings!

How did you get your bags so neat? Mine usually pulls juice out of the bag, regardless of settings.
After learning the hard way, I double seal my bags. Then after the second seal, I just flatten them out and into the freezer they go. By making them a uniform thickness, they defrost and reheat much more evenly.
