He suggests brining for an hour before cooking in his tips section. I have never brined a rack before but it's worth a try. I don't think I would do it for a contest but I love to experiment at home.

Thanks JB. Girl at the butcher shop told me she marinates hers in vinegar for an hour before cooking??? Anyone?
