Flip or No Flip

Do you flip your briskets?

Fat side down, no flip, cuz it works for me. I do cut the point of a whole packer for burnt ends.

D,

I cook mine fat side down the entire cook, and when I foil it to rest upon finish, OR if I foil at 165 to speed things up then I'll flip it to fat side up.

I do the same. I have never ever flipped a brisket. Never saw any reason to.

Start fat side up and flip half way through to develop good top bark.

Cooking offset.
