Another good seller is chicken lollipops. They are cheap to buy, easy to make and it would be something different than what the other vendors have to make you stand out. All you do is buy some chicken legs,cut and remove the tendon at the top of bone and pull the skin down and over the meat. Wrap the bone in foil so it won't burn.Smoke them at your desired temperature and sauce them up. People love them because it's easy to hold and great to eat.
