First cook on my ECB!

Decided to do a couple slabs of spareribs this morning. Started at 4:30 AM to get the fire going (the outside temp was 19º F). Started with 25 briquettes, and the temp got only to 151º F. Added 20 more and she stabilized at about 250-260º. Each hour I put another 20 coals on, along with some apple wood chunks (nearing the end of my bag, was more like chips). Smoked them for 3 hours, then wrapped them in foil for 2 more hours with apple juice, then slathered some BBQ sauce on for the last hour with a few more apple wood "chunks".
