Wow. Looks great ! Nice price too. I'm gunna have to cut back on BB ribs cuz of the new house...hell, cutting back on a lot of things! Beef ribs looks like a nice low cost option for a nice feast!

:Edit ... What's the pie tin for? Clean up?

Very nice color and very meaty beef ribs!! You say they could have cooked longer?? Were they tough?? Did you foil? I normally cook beef ribs exactly as I do pork. I cook around 235 for about 4 hours in the smoke, 1 in the foil and the last hour back in the smoke. The foil will really help render the fat and braise the ribs in fat and steam. The bone will typically pull back away from the bone about 1/2 to 3/4 inch.
