If the cheese stays in place that way I might be inclined to try it without bacon. I do not like chewy bacon and that seems to be an issue for me with abt's

Tim my wife makes poppers in the oven very similar to yours, except she adds Mexi Cheese and rolls them in tortilla crumbs, they turn out great! Good job!
