Plumb that pit for gas and get some sleep, burn coals and wood till you need sleep then turn on the gas. It better than letting meat sit in a pit under 140 degrees growing bacteria.

My pit wont hold a steady temp if my life depended on it, its ugly as hell and weighs about two ton. The three thermometers in the pit never read the same temp. I dont foil in the pit (yet), but have made some of the best Q' Ive ever had. No rules here, its a pain in the ass with constant tending, and I love every minuete of it !
