Brother I'm no expert, but I'd consider a whole different set up, possibly using 2 charcoal grates set at 90 degree angles to hold the coals, with
ashes dropping through.

Do you think it wise to drill more holes in the charcoal pan for next time ?

I had 20 or more 1/4" inch holes in the charcoal pan of my ECB. Put a pizza pan underneath of it an give it a tap or two every 30 minutes or so. That should keep your airflow rolling right along.

Besides being a pain with the charcoal pan, the ECB does pretty darn good Q. It's just a pain in the rump roast.

One day I'll get a WSM, but right now I don't have the $$

.............Did someone say Beer ?

ECB will get the job done, just with a little more effort. A majority of the folks on this board started off with one. If you are like me and you are thinking $200 bucks is alot for the WSM, don't sweat it. It's worth every penny! Either way, good luck!
