I received 2 deer shoulder roasts last season and pulled one out last weekend. It had been years since I had deer and decided to cook it in the oven. I used a rub which leaned towards Thai and it really sucked. The rub did not compliment the roast at all. My wife would not even eat it.

If anybody had a recipe (rub, marinade or general prep) for barbecuing a deer roast I would appreciate the help. I do not want to thaw out the other one unless I am fairly sure it will be edible.

FYI: It is a small roast. I would say bone and all probably about 3 or 4 lbs.

Try this, it's tasty.
4 lb venison roast.
6 slices of bacon.
1 cup of red wine.
1 sprig of rosemary.
2 cloves.
2 tablespoons of breadcrumbs.
2 tablespoons of butter.
1 1/2 teaspoons of sugar.
1 teaspoon of vinegar.
1/2 teaspoon of cinnamon.
1/4 teaspoon of ginger.
Salt and pepper.
Wrap the bacon around the roast.

Put the rosemary in a roasting pan and place the roast on top of it.

Mix together the wine, ginger, cinnamon, cloves and sugar. Pour around roast.

Season with salt and pepper.

Roast at 360°F for about 2 hours and 30 minutes.

Remove from pan to a serving platter; strain off juices into a saucepan.

Over a low heat, cook the juices with the breadcrumbs until boiling. Add the vinegar and butter; pour over roast.
I do it in the water pan of the WSM in foil.

Dang that do sound good. Now next time some sportsman want to give me a chunk of Bambi or his Mother or Daddy grandparents etc. I will know whut to do with it. I usually just keep it a while and give it to somebody else. Thanks folks.
