Cold brisket cook

Well, I tried to wait for a warmer day to cook these monsters but it never happened.

I started prepping at 6:30 this morning and I'll take them off whenever they're done. I'll slice and shrink wrap them tomorrow for winter eats.

Right now they're humming along at 240°F

Temperature -4°C




A couple of big ones, all I could find when I was in Buffalo a couple of weeks ago.

I'll try and update throughout the day, we're supposed to get 10cm of snow today as well. Joy!
 
-4 deg??? :shock: ****** Boy!... No Double ****** Boy! I aint never been in weather like that, Is it cold :?: :LOL:
 
Go Christopher Go...nothing like cold weather Qing....I've got a small flat to do this weekend...Next time you are down my way give me a ring.
 
They look like wallmart lablels. They cook up good.

It's about 25°F.

11:30 update, I haven't peeked yet, but it's started to snow. The WSM is holding steady at 240°F.

 
I am never doing such big pieces of meat when it's this cold out.

I lost some heat around 6 and it took a while to recover, and I just threw on more coal and the temp dropped to 170.

The briskets are at 157 and have been since 6:30.

I should have saved this and entered the Frozen Few!
