As I’m in between jobs yet again (I hate being freelance), I decided to fire up the old offset and let the WSM rest a spell. I cooked up a chuck roast, some salmon and some sausages for lunch. The roast will be pulled, sealed in foodsaver bags and eaten later as will the salmon. The sausage isn’t anything special, just mustard and a whole bunch of sauerkraut.

Very nice Toby. Is the pit new?

I found it for $20.00 at a garage sale up the street, it was still in the box. Set it up and I've used it approximately 5 times, mainly for salmon.
