Hi
I'm such a noob to all of this threw down a chuck eye today 5 hours with Beech and oak....... thought on how to improve?
or is this cut not a good smoker......

We do not play with pot roast outdoors. Now grind it up and make burgers. That works well.

Still resting under foil need another 15 minutes for a total of 35-40 mins of rest
 
Oooh, I would have made some jerky out of that! I bet it's still gonna be some good roast beef
 
LOL....love it I'm a noob I cooked it to 150 and let it sit forever when I need stock meat or loose my job I'll know where to go for feedzzzz:rolleyes:
