Did a prime rib roast Christmas eve on the WSM.It was a huge roast that filled the smoker from end to end. That worked out perfect as the ends were well, and the middle was rare. The pic is about half way between the end and the middle. Everyone had theres done like they like it. It came ok, but got it from a local butcher instead of Wegmans as Ive done in the past. Also did a turkey as part of Christmas brunch... Second one Ive done and Im pretty sure we will never oven roast one again. We brined it, then took the fruit from the brine and onions and stuffed the cavity.. It came really nice and moist ![attachment=0:2dzdhyb9]aaa1225turkey.jpg[/attachment:2dzdhyb9]

see, I really do cook once in a while..Im not just a whiner...
