I am interested if anyone else is using cheese cloth over their turkeys when smoking in an offset smoker? I use reverse airflow and didn't know if this would still be needed since the smoke has a little bit to travel before it gets to the birds. If using, do you wet the cheese cloth and then put it over the birds?
 
I also cook on a reverse flow and have only done a couple of birds, used cloth on one and didn't notice a lot of difference but maybe should of double wrapped, need to try it again
