After two straight weekends of comps and then three days of company bore-fest, I was ready to cook something. FOR ME!!!

Pan fried some flat corn torts and folded them into a shell, chopped some RIPE jalapenos, onions, cheese, guacomoli, and sour cream. AND some spanish rice..................
I'm fricken stuffed!!
 
Whew..looks good. Now it hard to imagine a fella coming from back to back comps craving smoked meat and not having any leftover chicken. Both of them dielemmas is equally strange:)

I bring one chicken. And didn't use smoking wood for these.
 
Sausage was snacks while waiting on the shredded chicken to swim in marinade for a few hours in the fridge.

Even though the chicken was seasoned on the outside it was a little too plain for my taste to put in tacos. Mixed it with cumin, cilantro, oregano, Rotel tomato and a little chili powder.
