is in the fridge....cooking one for me, one for a friend who is
smoking 2 hams. We will trade and be happy. Using the Apple
Brine on the tvwbb (TheVirtualWolfeBoyBanned) forum.

Brined Tuesday night, in the fridge drying out now.
 
The top grate is resting on the bottom turkey. One of those boys
ain't gonna be picture perfect. Still, I'm percolating along.
 
got the turkeys on a little early (a good thing). Fought the temps for a while....but
settled in now at 312. A quick peek as my probe hits 160.....at least the top one
is cooking faster than I thought.
 
last years looked a lot better, but it appears I didn't dry it out. Still nervous
about the hammy taste. I ripped off the wing tips and tasted....plenty of
smoke....nom nom nom
 
Looks great Cappy. I have a bird brining in the fridge as I type, going to smoke it on Sat as we go to relatives for turkey day.
