That brine looks delightful sitting in that cooler.

Re: Cappy's Turkey Day Turkey

Cappy are you going to lay some of that bacon across the breasts during the cooking process?

Re: Cappy's Turkey Day Turkey

Don't think so. I don't like the flavor of turkey mingling in with my bacon.
It cooks just fine in the frying pan.

The top grate is resting on the bottom turkey. One of those boys
ain't gonna be picture perfect. Still, I'm percolating along.

Re: Cappy's Turkey Day Turkey

got the turkeys on a little early (a good thing). Fought the temps for a while....but
settled in now at 312. A quick peek as my probe hits 160.....at least the top one
is cooking faster than I thought.

Re: Cappy's Turkey Day Turkey

last years looked a lot better, but it appears I didn't dry it out. Still nervous
about the hammy taste. I ripped off the wing tips and tasted....plenty of
smoke....nom nom nom

Looks great Cappy. I have a bird brining in the fridge as I type, going to smoke it on Sat as we go to relatives for turkey day.

Good Lord. That turkey was fantastic. The ham stunk but I won't say anything about
that cause they gave me good carrots.
