Butts and briskets in the rain

140 lbs of Butts and 11 brisket flats. It was a pretty good day in spite of the rain. Started the pit at 5:30 am and finished the last butt at 7:30 pm.

I let the butts drip down on the flats at first then I moved the butts down after the briskets were finished for conveinence. Don't know if I will do that again. It did keep them moist though.

Sorry no before pics or pics of the flats on the smoker.. the wife had the camera taking pics of the daughter at an egg hunt.

I was hoping for a better smoke ring on the brisket, but it didnt turn out that way.

Last few times I had the privilege of using a friends Buffalo Chopper we turned the second blade around backwards. Sounds goofy but we got a better product, (not chopped so fine) We also got a better yield per pound that way too. Sounds odd, but it worked. Great looking groceries there Gary!
