I don't know how it could get any easier. I seasoned up an 8 pounder, threw it in the Original Bradley Smoker with 5 hours worth of apple and hickory mix and a full catch pan full of water at 2200, jacked the temp slide all the way to the right, Watched TV and then went to bed. No wires, no temp watching(although I do know the smoker peaks at 275), and no worrying or getting up to check on it.
Seasoned up with Ritter's Just Sweet Rub
Woke up at 0530, made coffee, ran out to the curb in my PJ's to get the paper, and at 0600 went and retrieved it from the Bradley. Just for giggles I checked the temp and it was 193 and the bone would pull.
Wrapped it in foil and stuck it in the Cambro to rest while I read the paper. Then pulled it and made a sammich for breakfast.
It's going to be a great day!
